We directly contract with farmers in and around Kyoto to source freshly harvested vegetables every day.
We cherish the seasonal variety of ingredients and our mission is to deliver them to our guests in their most delicious state. Respect for Kyoto's rich food culture and the carefully grown ingredients is embedded in every dish.
Authentic Dashi by Our Craftsmen
The dashi that forms the foundation of our cuisine is carefully prepared by hand each morning by our owner. We use only true kombu from Rishiri, Hokkaido, and aged dried bonito from Makurazaki, Kagoshima.
No chemical seasonings are used whatsoever; the deep flavor comes solely from the natural umami of the ingredients. This dedication to never cutting corners is the cornerstone of our cuisine.
Harmony of Wine and Cuisine
Our sommelier-certified staff will suggest the perfect wine to complement each dish. We offer a wide selection centered on French Burgundy, as well as Japanese wines.
We always have over 10 varieties of wine by the glass, so you can enjoy different pairings as your meal progresses. Non-alcoholic pairings are also available.
